Caviar Deviled Eggs

These delicate and beautiful eggs are the classy, rich aunt to the deviled egg you grew up with. She shows up to family dinner with a nice bottle of wine, dressed to the nines, and brings expensive gifts for everyone. Your mom may roll her eyes at her until she realizes how truly fabulous she is. Demanded at every holiday by family and friends, and sometimes on a regular Saturday afternoon with a crisp glass of champagne.
TIME: 25 mins YIELDS: 12 servings
INGREDIENTS
12 eggs
2 tbsp mayo
1 tbsp Dijon mustard
1 tbsp dill pickle juice
1 tsp paprika
1 tsp garlic powder
1 tsp of salt & pepper
1 can black osteria caviar (or caviar of your choosing)
1 can of beet juice (drained from beets - save beets for Beet Pasta found in LBC recipes)
Fresh dill to garnish
INSTRUCTIONS
Boil eggs for approximately 11 minutes and place into bowl with ice and water.
Peel eggs. Gently place whole eggs into a jar or container with beet juice, make sure they are fully submerged - if you do not have enough beet juice add a little water. Place in fridge for 15-20 minutes.
Once eggs are perfect shade of pink, slice eggs in half and place yellow egg yolks into the bowl. Gently push the outer edge of egg and yolks should pop out.
To the bowl, add mayo, dijon mustard, pickle juice, paprika, garlic powder, salt, pepper, and mix well (use a blender or immersion blender if needed).
Mixture should be smooth but thick. Use piping bag or Ziploc bag to pipe into halved eggs.
Top with a garnish of caviar and fresh dill.
Tip: Make sure to use plastic or pearl spoon when handling caviar. Metal will change the taste of the caviar.
CAVIAR:
Whole Foods typically carries caviar if you are in a pinch and need to buy quickly. However, I recommend visiting a caviar shop if available in your area or ordering online. I've included a couple of my favorites below.
