YIELDS: 4-6 SERVINGS TIME: 1 HOUR 30 MINS
INGREDIENTS:
1 package of washed and ends trimmed haricots verts (or fresh green beans of your choosing)
4-5 small sweet onions, peeled, sliced in half, and layers separated
2 tbsp of butter
2 tbsp miso
1 tsp of Worcestershire
3-4 tbsp of boiling water
Fresh finely chopped chives or sesame seeds for garnish
INSTRUCTIONS:
Pre-heat oven to 375 degrees
In a roasting pan or casserole dish with lid, add butter, miso, Worcestershire, and slowly add hot water. Gently whisk until combined and a light broth forms. If you need more water, add more, if it is too thin, add more miso and butter. Whisk gently until a thick broth forms.
Place onion layers face down in the dish and cover with a lid.
Bake onions with miso broth for 1 hour covered. Basting the onions with a spoon at 30 minutes.
Blanch the haricots verts by boiling them for approximately 2 minutes and then placing them in an ice bath. This will help retain their "greenness"
Once the onions have been in the oven for an hour, place the drained haricots verts in with the onions and broth tossing gently.
Return the pan to the oven for 15 minutes or until the haricots verts are cooked to your preferred tenderness.
To plate, carefully place haricots verts on a platter or plate, spooning the onions and remaining broth/sauce on top.
Garnish with flaky salt, chives, and/or sesame seeds. Serve immediately.
