Pesto Protein Pasta Salad

YIELDS: 4-6 SERVINGS TIME: 30 MINS
INGREDIENTS:
1 Package of Banza Protein Rotini Pasta
1 rotisserie chicken shredded
1/2 of cucumber finely diced
10 cherry tomatoes diced
1 bell pepper diced
1 jar of roasted red peppers drained and finely chopped
1/2 bag of spinach washed and roughly chopped
1 jar of your favorite basil pesto (I used Rana pesto)
Grated parmesan to taste
Black Pepper to taste
INSTRUCTIONS:
Prepare the Banza pasta according to package. Rinse under cold water and drain.
To a large bowl, add shredded chicken, pasta, cucumber, cherry tomatoes, bell pepper, roasted red peppers, and spinach.
Add a generous portion of basil pesto to the bowl and toss until fully coated.
Add fresh black pepper to taste. Typically salt is not needed with the pesto, but you do you.
Garnish with grated parmesan.
Serve as a light dinner or keeps perfectly in the fridge for meal prep!
